These Fresh Summer Drinks are Best Enjoyed on Patios

Summer is the best time to get outside and enjoy a refreshing beverage — or two! The warm temperatures and long, sunny days practically beg to be enjoyed by sitting on a patio with good company, drink in hand.

At Coast Hotels, we know that excellent drinks and food are central to any getaway, whether it's a quick overnight staycation or an extended trip. That's why we take tremendous pride in our hotels' food and beverage programs, as well as our amazing restaurant and lounge patios. Read on to learn more about a few of them, along with corresponding signature cocktails from various Coast Hotels. Whether you plan to enjoy these drinks on your own patio or at a favourite Coast Hotels property, we hope they add a little more pizazz to your summer. Even better, each of these drinks can easily be made into non-alcoholic "mocktails" with a few simple tweaks. Cheers!

Coast Edmonton Plaza Hotel by APA

Situated in the heart of downtown Edmonton, Alberta, this upscale urban hotel offers loads of amenities including a complimentary downtown shuttle, two electric vehicle charging stations, fitness centre, and indoor pool and hot tub. It's also pet-friendly and within easy walking distance of all the hottest local attractions and entertainment options. While Prestons Restaurant + Lounge has been closed for much of the past year, we’re hoping for a re-opening this year! In the meantime, the Food & Beverage team has shared one of their favourite summer seltzer drinks - proving that tropical vibes can be found in the heart of Edmonton.

Peach Coconut Spritzer

  • 1 oz vodka
  • 1 oz peach Schnapps
  • Ripe peach
  • Coconut water
  • Star Anise
  • White sugar
  • Sparkling water

Muddle the fresh peach with sugar in a Collins (tall) glass. Fill a cocktail shaker with ice, then add peach Schnapps, coconut water, and crushed star anise (crush with a stone and pestle or, in a pinch, the bottom of a heavy glass or jar). Shake well, then strain the concoction into your glass and top with sparkling water. Give a couple of quick stirs with a spoon to mix, then serve.

Coast Hillcrest Hotel

Whether you're visiting Revelstoke to experience the biggest vertical in North America during a hike or you want to simply relax on a paddleboard in the mountains during the summer, the Coast Hillcrest Hotel is the ideal basecamp. The pet-friendly hotel features a steam room, sauna, and two whirlpools, plus a cozy reading room lounge and a complimentary shuttle to the slopes during ski season. The centerpiece of the hotel is arguably the Mountain View Terrace at the Begbie Room, where you can enjoy a cocktail with a view of mountain peaks and glaciers.

Blueberry Lavender Spritzer

  • ½ oz Blueberry Lavender Syrup (see recipe below to make your own!)
  • 1 oz of your favourite vodka; we recommend Mr. Jones Premium Vodka, distilled right here in Revelstoke or any local vodka in your area
  • Squeeze of fresh lime juice
  • Club soda or sparkling coconut water

Add fresh ice to a tulip glass. Combine Blueberry Lavender Syrup, vodka, and a squeeze of fresh lime juice. Top with club soda or sparkling coconut water, then garnish with a lime wedge, frozen blueberries, and a sprig of lavender.

Blueberry Lavender Simple Syrup

  • 1 cup water
  • 1 cup sugar
  • 1 cup blueberries (fresh or frozen)
  • 4 sprigs fresh food-grade lavender

Combine water, sugar, and blueberries in a saucepan and bring to a boil over medium-high heat. Stir well to dissolve the sugar. Reduce the heat to low, simmer, and add lavender sprigs. Let simmer for about 10 minutes. Strain the syrup and pour into a jar, using the back of a spoon or a masher to squeeze all the remaining juice from the berries.

This refreshing cocktail perfectly combines sweet and tart, using both a delicious raspberry liqueur and spirit distilled right here in beautiful British Columbia.

  • 1.5 oz Taynton Bay Spirit's Raspberry Vodka
  • 1/2 oz Elephant Islands Framboise Liqueur
  • 1/2 oz fresh lime juice
  • 1/2 oz simple syrup
  • Soda water
  • Fresh raspberries

Add vodka, liqueur, lime juice, and simple syrup to the bottom of a glass and stir. Next, fill the glass all the way to the top with ice and fill with soda water. Garnish with raspberries and serve!

  • 2 oz Campari
  • 2 oz fresh orange juice
  • Seltzer

Fill a glass with ice, add Campari and orange juice, then top with seltzer water. Super simple, yet absolutely delicious and refreshing!

Southern California is a year-round destination well-known for its mild weather, perpetually sunny skies, and endless entertainment options. What better way to enjoy all of that than having a meal or cocktail on the patio of Olive's Bistro & Lounge? While you're here, enjoy the posh terry cloth robes and in-room Starbucks coffee, and be sure to take advantage of the free parking and complimentary shuttle to Warner Bros. Studios, Universal Studios Hollywood, or the airport.

Lockheed Lemonade

  • 1 ½ oz gin
  • 1 oz sweet and sour mix
  • Soda water
  • ½ oz triple sec
  • Lemon wedge
  • Cocktail sugar (optional)

*Optional first step: Pour cocktail sugar onto a flat dish. Using a lemon wedge, rim the edge of your glass to moisten it, then dip the glass upside-down into the sugar. This creates a fun and sweet sugar rim on the glass.

Fill a rocks glass with fresh ice. Add the gin and sweet and sour mix to the glass, then fill with soda water. Carefully float the ½ oz of triple sec on the top and finally, garnish with a fresh lemon wedge.
